Cucumber Shukto in microwave

Cucumber Shukto - a bengali recipe with radhuni - a bengali spice mix

Ingredients: 

  1. Cucumber – 3 medium
  2. Bitter Gourd – 1 medium
  3. Ginger Paste – 1 tsp
  4. Mustard seeds – 1/2 tsp
  5. Radhuni – 1/2 tsp
  6. Turmeric Powder – 1/4 tsp
  7. Milk – 1/2 cup
  8. Oil – 2 tbsp
  9. Salt as per taste
  10. Sugar as per taste

Method:

  • Cut the cucumber and the bitter gourd in very small pieces. 
  • In a micro safe bowl add oil, radhuni, mustard and micro high for 2 mins.
  • Add bitter gourd and micro high for 2 mins.
  • Now add the cucumber pieces, add turmeric powder and mix well. Micro high for 2 mins.
  • Add milk, salt and sugar. Mix well. Micro at 80% power for 5 mins.
  • Check if the cucumber and bitter gourd pieces are tender. If not add some water and micro for another 1-2 mins.
  • The Shukto is ready to serve. This can go well with rice.
