Cucumber Shukto - a bengali recipe with radhuni - a bengali spice mix

Ingredients:
- Cucumber – 3 medium
- Bitter Gourd – 1 medium
- Ginger Paste – 1 tsp
- Mustard seeds – 1/2 tsp
- Radhuni – 1/2 tsp
- Turmeric Powder – 1/4 tsp
- Milk – 1/2 cup
- Oil – 2 tbsp
- Salt as per taste
- Sugar as per taste
Method:
- Cut the cucumber and the bitter gourd in very small pieces.
- In a micro safe bowl add oil, radhuni, mustard and micro high for 2 mins.
- Add bitter gourd and micro high for 2 mins.
- Now add the cucumber pieces, add turmeric powder and mix well. Micro high for 2 mins.
- Add milk, salt and sugar. Mix well. Micro at 80% power for 5 mins.
- Check if the cucumber and bitter gourd pieces are tender. If not add some water and micro for another 1-2 mins.
- The Shukto is ready to serve. This can go well with rice.
