Achari Paneer | আচারি পনীর | Spicy Cottage Cheese Gravy 

Achari Paneer is very delicious gravy which you can make for your everyday meals or for get together. This is a very spicy dish with cottage cheese made with Indian pickle spices. Achari dishes are made with the same spices used to make Indian pickles. Hence the name Achari. You can serve it with Jeera Rice/Paratha/Roti.

How to make Achari Paneer

Ingredients (Serves 2)

For Achari Masala

Dry Red Chilli – 6 Nos.

Cumin Seed – 1 Tsp

Fennel Seed – 1 Tsp

Mustard Seed – 1 Tsp

Nigella Seed (Kalonji) – ½ Tsp

Fenugreek Seed (Methi) – ¼ Tsp

 

Paneer cut into cubes  – 200 gms

Kalonji – ½ Tsp

Dry Red Chilli – 1 no.

Asafoetida (Hing) – ¼ Tsp

Onion paste – 3 Tsp

Ginger garlic Paste – 1 Tsp

Green Chilli Paste – 1 Tsp

Tomato Puree – 4 Tsp

Turmeric Powder – ½ Tsp

Cumin Powder – ½ Tsp

Coriander Powder – ½ Tsp

Red Chilli Powder – ½ Tsp

Kashmiri Red Chilli Powder – ½ Tsp

Besan – 1 Tbsp

Curd – ½ Cup

Kasuri Methi – ½ Tsp

Coriander leaves chopped – 1 Tbsp

Mustard oil – 2 Tbsp

Salt as per taste

Method:

1.       Dry roast all the spices under Achari masala for 2-3 minutes and once cool make a fine powder in a mixer grinder and keep it aside.

2.       Heat Mustard oil. Tamper with dry red chilli and kalonji seed.

3.       Add asafoetida and fry for 1 minute. Add the onion paste and sauté for 2 -3 minutes.

4.       Add ginger garlic paste. Saute till the raw smell goes away.

5.       Add Tomato Puree and sauté for 2-3 minutes.

6.       Add 1 Tbsp of Achari Masal and mix. Add Turmeric Powder, Cumin Powder, Coriander Powder, Red Chilli Powder, Kashmiri Red chilli Powder. Mix well with 2-3 Tbsp water. Saute till oil comes out.

7.       Add 1 Tbsp Besan and mix well.

8.       Lower the flame, add ½ Cup of well beaten curd and mix well.

9.       Saute it in medium flame. Add ½ cup of water. Cover and cook for 5-6 minutes.

10.   Add the Paneer pieces. Add ½ Tsp Kasuri methi powder. Cook for another 2-3 minutes. Do not overcook otherwise the paneer will become hard.

11.   Add chopped coriander leaves.

12.   Serve with Jeera Rice or Roti or Paratha.
