Broccoli Soup | Very Healthy Recipe | Weight Loss Recipe 

Broccoli soup is very healthy and comfort food. It can be easily made in 25-30 minutes for your dinner. This is also a very good soup for weight loss. 

Ingredients (Serves: 2)

Broccoli cut into pieces – 200 gms

Onion Chopped – 1 medium

Garlic Chopped – 5 to 6 cloves

Milk – ½ Cup

Butter – 2 to 3 Tsp

Oil – 1-2 Tsp

Black Pepper Powder – 1 Tsp

Cornflour – 1 Tsp

Salt – as per taste 

For Garnish

Garlic chopped and fried – 5-6 cloves

Broccoli – 5-6 Pieces 

Method

1.      In a microwave safe bowl, add the broccoli pieces and water to cover it. Microwave in high power for 5 minutes.

2.      Drain the broccoli pieces through a sieve. Keep the drained water for use later.

3.      In a microwave safe bowl add 2 Tsp oil and chopped garlic

4.      Add chopped onion, mix and microwave at high power for 2 minutes.

5.      Add the boiled broccoli pieces; microwave high for 2 minutes.

6.      Add drained water, and 1 cup water. Microwave high for 3 minutes.

7.      Cool in down and blend in a mixer and keep aside.

8.      In a microwave safe bowl add 1 Tsp butter and 1 Tsp oil; microwave high for 1 minute

9.      Add ¾ cup of the broccoli paste; ½ cup milk and salt as per taste.

10.   Microwave high for 4 minutes.

11.   Take it out and add 1 Tsp Black pepper powder. Add 1 Tsp of corn flour mix with 4 Tbsp water. Mix and microwave high for 2 minutes.

12.   For Garnish in a MW safe bowl add butter and broccoli pieces. Microwave for 1 minute and keep aside. Then in a bowl add butter and chopped garlic. Microwave high for 3 minutes. Take out and stir. Microwave high for another 2 minutes or till the garlics are little bit golden colour.

13.   Pour the soup in serving bowl and garnish with fried garlic and broccoli.
