Crispy Sabudana Vada | Air Fryer Recipe | সাবুদানা বড়া  |  Pearl Tapioca Fritters

Sabudana Vada is a very popular snack made from soaked sabudana (tapioca pearls). It is typically prepared in Indian states of MaharashtraKarnatakaUttar PradeshMadhya PradeshRajasthan and Gujarat. In major towns like Mumbai, Pune, Indore, Bhopal, Jaipur and Nagpur, it is available as street food and is widely eaten throughout the year. It is the dish of choice when an individual observes a "fast" during ShivratriNavratri, or a similar Hindu religious occasion.

Sabudana Vada is made in Air Fryer, hence no deep frying and very less oil. So, it is a very healthy one.

Ingredients

Sabudana ( Pearl Tapioca) – 1  Cup

Boiled Potato – 2 Big

Crushed roasted Peanut – ½ Cup

Black Pepper Powder – 1 Tsp

Chopped Green Chilli – 4/5 Nos.

Curry Leaves – 8-10 Nos.

Chopped Ginger – 1 Tsp

Cumin Seed – 1 Tsp

Salt – 1 Tsp or as per taste

Oil – 3 Tsp

Method

·        Rinse sabudana very well in water. Then soak sabudana for 4-5 hours.

·        Drain the sabudana very well and keep aside in a plate.

·        Boil the potatoes and when warm peel and grate them.

·        Roast the peanuts in a microwave for 2 minutes.

·        When cooled make a coarse powder in a dry grinder.

·        Now mix the sabudana with grated boiled potatoes.

·        Next in a microwave safe bowl add 2 Tsp oil. Add chopped ginger, chopped green chillies, curry leaves and 1 Tsp Cumin Seed.

·        Microwave high for 1 minute. Add this to the mixture of sabudana and potatoes.

·        Add salt and 1 Tsp black pepper powder and mix well

·        Now wet your palm take some mixture and make patties by pressing through your palm.

·        Pre heat Air fryer at 180 deg C for 3 minutes. Next brush the basket with oil.

·        Now put the patties into the air fryer basket 4-5 at a time. Do not over crowd.

·        Bake at 180 deg C for 10 minutes. After 10 minutes open the basket and brush the patties with oil. Bake again for another 7-8 minutes or till the vadas are golden in colour.

·        Take out and serve with some sauce or chutney.
