Kothimbir
Vadi (Coriander Leaves Fritter) is a favourite Maharashtrain snack. It is made
from Coriander leaves and Gram flour along with some other spices. It is a perfect
tea time snack. It is generally served with green chutney.
Ingredients
(Serves: 2 - 3)
1 Cup Coriander Leaves washed and
chopped
1 Cup gram flour (Besan)
3 Tbsp Rice Flour
1 Tsp Seasme Seed
½ Tsp Red Chilli Powder
½ Tsp Turmeric Powder
½ Tsp Cumin Seed
¼ Tsp Baking Powder
1 Tbsp Garlic/Green Chilli Paste (5
Cloves Garlic and 3 Green Chilli)
2 Tbsp oil for kneading dough
½ Cup oil for frying
½ Tsp salt or as per taste
Method
1. Combine all the ingredients except oil in a bowl and mix well. Knead
a soft dough by adding little water. Smoothen the dough by apply 1 Tbsp of oil.
2. Apply oil in your palm and divide the dough in 2 equal portions.
Shape each portion in a cylindrical roll of about 2 inch diameter.
3. Arrange the rolls on greased steamer plate and steam in a steamer in
medium flame for about 15-20 minutes. Check by inserting a knife. It should
come clean. Keep aside to cool.
4. Once cool cut into 1 cm slices.
5. Heat ½ Cup oil in a pan and fry the slices in batches till golden
brown from all sides. Drain on a tissue paper.
6. Serve hot with your green chutney.
