Niramish Aloor Dum (no onion no garlic) | Bhoger
Aloor Dum | পিয়াঁজ রসুন ছাড়া
নিরামিষ আলুর দম
Ingredients (Serves: 2-3)
250 gms boiled baby potato
3 nos. green cardamom
4 cloves
1 inch cinnamon
6-8 black pepper corn
1 Tbsp Ginger green chilli paste (paste
of 1” ginger and 3 green chilli)
½ cup beaten curd
1 Tsp sugar
½ cup freshly grated coconut
½ Tsp black pepper powder
¼ Tsp garam masala powder
4-5 Tbsp chopped coriander leaves
2 Tbsp Oil
1 Tbsp ghee
Salt as per taste
Method
1. Boil the baby potato and remove the skin.
2. Heat 2 Tbsp oil and fry the potatoes till slight golden colour. Remove
and keep aside.
3. In the same pan add 1 Tbsp ghee. Add cardamom, cloves, cinnamon and
black pepper corn. Fry for 1-2 minutes. Now add 1 Tbsp of ginger green chilli
paste and fry for 2-3 minutes. Add 3 Tsp of water. Add the fried potatoes.
Cover and cook for 2-3 minutes. Add salt as per taste.
4. Lower the flame and add beaten curd and mix well. Add 1 Tsp sugar, cover
and cook for 1-2 minutes in low flame.
5. Now add ½ cup freshly grated coconut and mix. Add ½ Tsp black pepper
powder and ¼ Tsp garam masala powder. Mix well.
6. Add 4-5 Tbsp chopped coriander leaves and mix. Cover and cook for
another 2-3 minutes in low flame. Aloor Dum is ready. Serve with poori or
paratha or Bengali luchi.
